Sambar
Pigeon pea lentils, tamarind, and a special spice mixture known as sambar powder are used to make the South Indian dish sambar, a lentil and vegetable stew. It is a common meal in South Indian households and is adored by a lot of people.

- 100 g Toor dal
- 2 Garlic cloves
- 2 tbsp Oil
- 1/2 tsp Mustard
- 1/4 tsp Fenugreek
- 1/4 tsp Cumin seeds
- Curry leaves
- Shallots 10 or onion 2
- 1 Green chilli
- 1 Tomato
- 1 Drumstick
- 2 Brinjal
- 1/2 Carrot
- Salt
- Turmeric powder
- 2 tbsp Sambar powder
- Tamarind juice
- Coriander leaves
- Water
Take a pot and add toor dal and wash it.
Then add water as cover the toor dal and add garlic cloves.
Cook them.
Then take another pot and add oil.
Add mustard, cumin seeds, fenugreek and curry leaves.
Then add sallots or onion, and green chilies.
Saute well.
Then add tomato and saute well.
Now add drumstick, brinjal, and carrot.
Add salt, turmeric powder and mix well.
Then add sambar powder and saute well.
Add water, cover and cook well around 10 mins.
Now add tamarind juice and boil for 5 minutes.
Mash cooked toor dal and addto the sambar and mix well.
Add salt according to taste and boil for 5 minutes.
Then add coriander leaves and mix well.
Now sambar is ready.
